Prosecco Brut DOC: The Charmat method (also called the “Italian Method”) of producing sparkling wines is often used in the crafting of Prosecco. This method forces the second fermentation to happen in a large stainless steel tank prior to bottling, rather than in the bottle like the traditional méthode champenoise. The Charmat method is a cheaper means for pushing a wine through second fermentation and is best used on sparkling wines that are meant to be consumed young and relatively fresh. Sporting Connection: The Cosulich family has an impressive sporting pedigree. Francesco and his two sons have represented Italian rugby at top levels. As a family and wine company, they have also been official partners with the Italian Rugby team for the last 20 years and have contributed a huge amount to many worthwhile sporting causes. We first met Francesco Cosulich at the 2015 Rugby World Cup watching Italy play versus France, and besides his family’s rugby prowess he is a winemaker of great quality and with a wonderful history.
